Pear Poaching liquid

Ingredients

  • 1 c turbinado sugar
  • 2 c water
  • 1 cinnamon stick

Instructions

  1. Combine the ingredients in a pot large enough for this recipe plus half the pears you will be poaching. Do not overload the pot, the pears should be floating in the liquid and there should be room for the liquid to bubble up without running over the sides.
  2. Bring the liquid to a boil and simmer for 5 minutes. Add the pears and return to a simmer. Cook until just soft enough for a knife to slip easily into the pear.
  3. Remove the pears from the liquid and repeat the process for the second half of the pears.
  4. Remove the poaching liquid from the heat and add 2 cups of water, mixing well. Pour this over top of the pears and refrigerate for use.
