Ingredients
- 20 oz all-purpose flour
- 1⁄2 oz baking powder
- 6 oz butter, cold
- 1⁄2 oz kosher salt
- 1 egg
- 4 1⁄2 oz water, warm
Instructions
- Sift together the flour and baking powder. Cut the butter into 1/2-inch cubes and, using your fingertips, rub the flour and butter together until it is the consistency of Parmesan cheese.
- Combine the salt and water and stir until the salt is dissolved. Add the egg and whisk together.
- Make a well in the center of the flour mixture and pour in the water mixture. Mix well, until the dough has just come together but is not rubbery. Wrap and let rest at room temperature for about an hour.
- Roll out on a well flour surface until it is the desired size and thickness.
- Bake at 350°F with egg-wash on exposed surfaces to achieve a nice golden brown color.
